It is traditionally produced by roasting, grinding, and cooking castor beans (Ricinus communis), of Haitian origin in water and then separating the oil from the water. This process gives the oil a distinctive dark color and nutty aroma. It is relatively efficient for small scale cottage industry type operations, but with the increasing demand for this very versatile product, some producers cold press the toasted beans instead of cooking to produce the same high quality dark amber oil from the Haitian sourced beans.
